Carbon dioxide is a vital ingredient in the brewing and bottling of beers and ciders, not only adding fizz but enhancing the aroma, flavour, texture and appearance playing a major role in shaping a beers character. Carbonation is the process of dissolving carbon dioxide in liquid. The process usually involves carbon dioxide under high pressure. When the pressure is reduced, the carbon dioxide is released from the solution as small bubbles, which causes the solution to "fizz".
The beer or cider is placed into a sealed (or soon to be sealed) container and CO2 is rapidly added. Under high pressure, the CO2 is absorbed into the beer or cider. This is actually the preferred method for most breweries, as the turn-around time for a finished beer is quicker, and the bottle contains little to no sediment, as a beer has been pasteurised and yeast removed from the liquid.
CO2 also plays a positive role on head development upon pouring the beverage, a decisive element in the appearance of the beverage.
